Preheat Your Oven: Preheat your oven to 190°C (375°F) and line a baking tray with parchment paper.
Mix the Ingredients: In a large bowl, combine the minced sausage with brown sugar, sage, salt, pepper, marjoram, red pepper flakes, and ground cloves. Mix everything thoroughly with your hands until the spices are evenly incorporated.
Shape the Bites: Roll the sausage mixture into small, bite-sized balls (about 2.5 to 4 cm in diameter). Place them on the prepared baking tray, leaving space between each ball.
Bake: Bake the sausage bites for 18-20 minutes or until they are fully cooked and golden brown. Check for an internal temperature of 71°C (160°F) for pork or 74°C (165°F) for turkey.
Serve: Transfer the sausage bites to a serving platter and insert toothpicks for easy handling. Drizzle with maple syrup or honey for added sweetness, if desired.
