Equipment

  • Mixing bowl
  • whisk
  • Rubber spatula
  • Baking pan (8 inches square)

Ingredients

For the Lemon Brownies

  • ¾ cup all-purpose flour
  • ¾ cup granulated sugar
  • ½ cup unsalted butter melted
  • ½ teaspoon sea salt
  • 3 large eggs
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract

For the Lemon Glaze

  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest

Instructions

  • Preheat the Oven: Set your oven to 350°F (175°C). Grease an 8-inch square baking dish or line it with parchment paper for easy removal.

Prepare the Batter

  • In a large mixing bowl, whisk together the melted butter and granulated sugar until well combined.
  • Add the eggs one at a time, whisking thoroughly after each addition.
  • Stir in the lemon zest, lemon juice, and vanilla extract until the mixture is smooth.
  • In a separate bowl, combine the flour and sea salt. Gradually fold this dry mixture into the wet ingredients until just combined. Be careful not to overmix.

Bake

  • Pour the batter into the prepared baking dish, spreading it evenly.
  • Bake for 20-25 minutes, or until the edges are lightly golden and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  • Allow the brownies to cool completely in the pan on a wire rack.

Prepare the Glaze

  • In a medium bowl, whisk together the powdered sugar, lemon juice, and lemon zest until smooth.
  • Once the brownies are cool, pour the glaze over the top, spreading it evenly.
  • Let the glaze set before cutting the brownies into squares.

Notes

  • For a bolder lemon flavor, use Meyer lemons, which are sweeter and more fragrant than regular lemons.
  • Avoid overmixing the batter—this will keep your brownies soft, fluffy, and tender.
  • Allow the brownies to cool completely before adding the glaze. If they’re too warm, the glaze will melt into the brownies instead of resting on top.
  • If you desire a thicker glaze, slightly reduce the amount of lemon juice or sift the powdered sugar before mixing for a smoother result consistency.
